Majella’s Cabernet Sauvignon is 100% estate fruit, vinified as several separate parcels with a combination of fermentation vessels. All finish fermentation in 300 litre oak barrels and are maturation for a further 18 months in new and second use French oak hogsheads. As always, to achieve this benchmark Coonawarra style, the parcels were only brought together just before bottling. Distinctive regional characteristics of eucalypt, mint and cassis, are accented with luscious fruit cake elements. All combine to give complexity, power, intensity and concentration.

“Inky dark maroon in colour, the nose is a mix of chocolate notes, blackberries, dried leather, cassis, black jellybeans, spices and cocoa powder. There is deft oak integration here. A refined style with focus, drive and elegance, the structure is seamless and we see black coffee notes emerge on the palate. There is serious length here, through to very fine powdery tannins. “The interesting thing here is the tannin. Indeed, as good as the fruit is, tannin is the defining aspect. It spreads from the mid-palate onwards, assertive and dry, fine grained but commanding. It gives a pronounced sense of gravity, but it also calls into question the wine’s balance.
